Need an excuse to eat a muffin?
These muffins are packed with Vitamin B which helps you convert food into energy and metabolize fats and proteins!
They are also a great source of Vitamin C, need for immune health & Vitamin A, which helps your skin, eyesight, bones, reproductive system and also supports the immune system.
Not to mention, these muffins also contain a good amount of magnesium & iron which is super important for us women and those who are anemic.
Have I convinced you yet? (But I didn’t even get to talk about how delicious they are and how much my little nephew Porter even LOVES them – yes it got the stamp of approval from a 2 year old).
BONUS tip: spread coconut oil on them instead of butter for even more energy and watch it melt over these hot cross buns!
OK now that you’re drooling, here’s the recipe…
Ingredients
- 1/2 cup unsweetened almond milk
- 1/2 cup unsweetened applesauce (or half an apple if using strong blender like vitamix)
- 1 large egg
- 2 teaspoons vanilla extract
- 2 handfuls of fresh organic spinach - uncooked (could also add shredded carrots, shredded zucchini, or shredded yellow squash (all raw) to really pack it full of veggies!)
- 1 ripe banana
- 2 tablespoons Organic Coconut Oil (melted)
- 1.5 cups buckwheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350° F
- Add first 8 ingredients to blender & blend first
- Add the dry ingredients & blend some more
- Grease muffin tins
- The mixture will be dense, use spatula to pour into muffin tins
- Bake for 17-20 minutes
