Gluten-Free Turkey Burger With Homemade Paleo Tzatziki Sauce
Ingredients
- Tzatziki Sauce:
- 3/4 cup coconut yogurt
- 1/4 cup fresh squeezed lemon juice
- 1/2 cup chopped cucumber
- 1 teaspoon fresh garlic, minced
- 2 tablespoons fresh dill or 2 tsp dried dill
- 1 teaspoon sea salt
- 1/4 cup chopped kalamata olives (optional)
- Turkey Burgers (makes 4):
- 1 pound ground turkey meat
- 2/3 cups of cooked quinoa
Instructions
- First make sure quinoa is cooked (boil 2:1 ratio of water to quinoa)
- In a big bowl mix the ground turkey meat with cooked quinoa and make 4 patties. Grill.
- In a small bowl, mix the coconut yogurt, lemon juice, cucumber, minced garlic, dill, and sea salt. Set aside.
- Once patties are cooked through, serve with sauce on top. No bun required. Serve in a bowl for a Mediterranean-style burger.
